1. Cut the potatoes into small cubes.
2. Place them in a pot, add salt and water to cover. Cook until tender.
3. Grate the mozzarella cheese on the finest side of a grater and set aside.
4. When the potatoes are ready, drain the water and place them in a bowl.
5. Add the butter and mash with a potato masher until smooth.
6. Add the cornstarch, garlic powder, pepper, oregano, and grated cheese. Mix well until you get a smooth dough.
7. Place the dough in a plastic bag and roll it out with a rolling pin until it forms an even layer.
8. Refrigerate for a few minutes to firm up.
9. Remove from the bag and cut into strips or squares, as you prefer.
10. Fry in hot oil over medium heat until golden brown on both sides.
11. Drain on paper towels to remove excess oil.
