Today I’m sharing my secret to hiding vegetables in a dessert:

👩‍🍳Procedure:

  1. In a bowl, whisk the eggs and sugar until light and fluffy.

  2. Add the oil and vanilla, mix well.

  3. Combine the sifted flour, cocoa, baking powder, and pinch of salt.

  4. Add the grated and squeezed courgettes.

  5. Add the chocolate chips (keep some aside for decoration on top).

  6. Pour into a buttered or parchment-lined 22cm mold.

  7. Bake in a static oven at 180°C for 40-45 minutes (do the toothpick test!).

Result:

A chocolatey, soft, incredibly moist cake, perfect for breakfast or a snack… and without even a gram of butter!
