Red bulgur salad – great for grilling or just on its own!

Preparation:

1. First, put the bulgur in a bowl (not too small), then pour the hot broth over it and let it swell for 10-15 minutes.

2. Next, finely dice the onion, bell pepper, and zucchini and briefly sauté them in a pan with olive oil. Add about 1 teaspoon of sugar to the pan and let it caramelize briefly.

3. Now sauté the tomato paste and deglaze with a little water, then season with salt, pepper, and paprika (or chili flakes if you like it really hot).
Add it to the bulgur while it’s still hot.

4. Next, cut the tomato and cucumber into fine cubes. Once the mixture has cooled slightly, add it and then season with vinegar, oil and spices.

Tip: If you like, you can also add some mint to the salad. This adds a lovely, fresh, oriental flavor.

5. To serve, the salad can be pressed into a small bowl and then turned out.

6. Personally, I think chili threads or red radish sprouts are a fun garnish.
