Pineapple-and-Coconut-Island-Delight Already a little bit of vacation…
This pineapple and coconut island delight is a delicious dessert that smells of the beach and vacation, and that I made for my kids last week. It was gone in no time!
It’s a crumble-style cake, but with coconut instead of flour, which makes it lighter and is also perfect for those with gluten allergies. And of course, since pineapple and coconut together are always a hit, it’s no wonder this exotic-flavored recipe is so delicious.
Serve with vanilla ice cream, whipped cream, or even lightly sweetened fromage blanc. But on its own, without anything at all, this coconut-pineapple delight is delicious too!
