Pasta with ricotta and zucchini

📝Ingredients (for 2 people):

  • 180 g pasta (penne, fusilli or whatever you prefer)

  • 2 medium-sized zucchini

  • 150 g ricotta (cow or sheep cheese, depending on your taste)

  • 1 garlic clove

  • 2 tablespoons extra virgin olive oil

  • Salt and pepper to taste

  • A few basil or mint leaves (optional)

  • Grated Parmesan cheese (optional)

  • A little pasta cooking water (for stirring)
