1. Cut the potatoes into even sticks
This way they cook evenly. Not too thick or too thin.
2. Soak them in ice water
Leave them for at least 30 minutes, or up to an hour.
This removes excess starch and helps them crisp up.
3. Dry them very well
This step is crucial! Use a clean cloth or paper towel. If they’re damp, they’ll steam and not brown.
4. (Optional) Pre-cook in the microwave
Put them in the microwave for 2-3 minutes to “open” the starch and cook them better. Then let them cool slightly before baking.
5. Bake or use an air fryer
Oven: Preheat to 220-230°C (very hot), place the potatoes on a baking sheet lined with baking paper, and space them out well.
Air fryer: 180-200°C for about 20-25 minutes, shaking halfway through cooking.
6. Season at the end
Add salt and spices right after removing them, while they’re hot.

Golden, crispy, flavorful, and light. Without a drop of oil!
