1. Heat the Oil
Begin by heating the vegetable oil in a cast-iron skillet or sauté pan over medium-high heat.
2. Add Potatoes & Onions
Carefully add the sliced potatoes and onions into the hot oil. Season generously with salt and pepper. If desired, sprinkle in garlic powder and red pepper flakes for extra flavor.
3. Cook Until Tender and Crisp
Sauté the mixture, turning frequently, for 10–15 minutes. The potatoes should be golden and fork-tender, and the onions lightly browned. For a softer, creamier texture, you can cover the skillet partway through cooking.
4. Drain and Serve
Once cooked, transfer to a plate lined with paper towels to absorb any excess oil. Finish with a sprinkle of fresh chives, and serve hot.
