Directions:

  1. Preheat the oven to 180 degrees Celsius.
  2. Rinse the smoked pork and pat dry. Rub with mustard and season with salt, pepper, paprika, and caraway.
  3. Heat the oil in a roasting pan and fry the smoked pork on all sides until golden brown.
  4. Add the onion rings and chopped garlic and fry briefly until they are slightly translucent.
  5. Pour in the vegetable stock and add the bay leaves.
  6. Cover the roasting pan and let the pork shank braise in the preheated oven for about 1.5 to 2 hours, until tender. Baste occasionally with the meat juices.
  7. After the cooking time, remove the smoked pork from the oven and let it rest for a short while.
  8. Pour the gravy into a saucepan and dilute with a little water if necessary. Season with salt and pepper, and add a little cream if desired.
  9. Cut the Kasseler into slices and serve with the sauce.
