Directions:
- Preheat the oven to 180 degrees Celsius.
- Rinse the smoked pork and pat dry. Rub with mustard and season with salt, pepper, paprika, and caraway.
- Heat the oil in a roasting pan and fry the smoked pork on all sides until golden brown.
- Add the onion rings and chopped garlic and fry briefly until they are slightly translucent.
- Pour in the vegetable stock and add the bay leaves.
- Cover the roasting pan and let the pork shank braise in the preheated oven for about 1.5 to 2 hours, until tender. Baste occasionally with the meat juices.
- After the cooking time, remove the smoked pork from the oven and let it rest for a short while.
- Pour the gravy into a saucepan and dilute with a little water if necessary. Season with salt and pepper, and add a little cream if desired.
- Cut the Kasseler into slices and serve with the sauce.
