I cook this at least twice a week! – Fantastic cauliflower schnitzel

Directions:

  1. Cut the cauliflower into small florets and boil in lightly salted water for about 5 minutes, until tender. Drain and let cool.
  2. In a bowl, whisk the eggs and season with the spices.
  3. In another bowl, mix the breadcrumbs with the grated Parmesan cheese.
  4. Dip the cauliflower florets first in the beaten eggs and then in the breadcrumbs and Parmesan mixture to coat them well.
  5. Heat enough oil in a pan and fry the breaded cauliflower florets until golden brown. Make sure to cook them evenly, about 3-4 minutes per side.
  6. After frying, drain on a paper towel to remove excess oil.

You can enjoy the cauliflower schnitzels on their own or serve them with a delicious sauce or dip. Happy cooking!
