Every time I bring this to a party it is an instant hit

Shred the aged Cheddar and smoked Gouda cheeses and combine in a large mixing bowl.
Add the cream cheese and mayonnaise to the bowl. Mix until well blended. Distribute the chopped roasted red peppers evenly by adding them to the mixture and stirring.
Add the dry mustard and onion powder. If desired, a pinch of cayenne pepper will add heat. Combine all ingredients and mix until well blended. (Alternatively, you can use an electric mixer.)
To make the dip milder, simply add some dried parsley and stir in. You can skip this step if you prefer.
After the dip is well blended, seal the bowl or place it in a container to prevent it from drying out. Refrigerate it for at least an hour, preferably overnight, to allow the flavors to blend.
To ensure the dip is properly blended, give it a quick stir before serving. If you like, you can add more chopped roasted red bell peppers or parsley for garnish.
Dip the vegetables in pimento cheese and serve with tortilla chips, crackers, or whatever you like. Enjoy!
