1. Make the Flatbread Dough
In a large bowl, combine flour, salt, baking powder, and garlic powder (if using).
Add grated carrots, warm water, olive oil, and yogurt. Mix until a dough forms.
Knead for 5–7 minutes on a floured surface until smooth and elastic.
Cover with a towel and let rest 20–30 minutes.
2. Prepare the Cheese Filling
Mix together mozzarella, Parmesan, and cream cheese (if using).
Season with salt and pepper. Set aside.
3. Shape the Flatbreads
Divide rested dough into 4–6 portions.
Roll each into a ball, then flatten into circles or ovals (about 1/4 inch thick).
4. Add the Cheese Filling
Place a spoonful of filling in the center of each dough circle.
Fold edges over the filling to form a pocket. Pinch edges to seal.
Gently flatten again into a round flatbread.
5. Cook the Flatbreads
Heat a skillet over medium heat with a little olive oil.
Cook each flatbread 2–3 minutes per side until golden brown and crispy.
(For a lighter version, cook in a dry nonstick pan without oil.)
6. Serve
Cool slightly before serving. Garnish with parsley or cilantro if desired.
Serve warm as a snack, side dish, or main meal with yogurt or dipping sauce.
Optional Variations
Herbed Flatbreads: Add thyme, rosemary, or oregano to the dough.
Spicy Kick: Add red pepper flakes or chopped chili to the filling.
Vegan Version: Use dairy-free yogurt and cheese alternatives.
