🥕 Veggie-packed: Carrots, celery, onions, and herbs for depth of flavor.
🍲 Comforting and versatile: Perfect on its own or with crusty bread.
Ingredients
1 lb (450 g) beef stew meat, cut into bite-sized pieces
1 cup pearl barley, rinsed
1 large onion, diced
2 carrots, sliced
2 celery stalks, sliced
3 cloves garlic, minced
6 cups beef broth
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper, to taste
2 tablespoons olive oil or butter
Fresh parsley, for garnish
Instructions
1. Brown the Beef
In a large pot, heat olive oil or butter over medium-high heat. Add the beef and brown on all sides. This step locks in flavor and adds depth to the broth. Remove the beef and set aside.
2. Sauté the Vegetables
In the same pot, add onions, carrots, celery, and garlic. Cook for 5–6 minutes until softened and fragrant.
3. Combine Ingredients
Return the beef to the pot. Add beef broth, barley, thyme, rosemary, salt, and pepper. Stir to combine.
4. Simmer
Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 45–60 minutes, or until the beef is tender and the barley is cooked through. Stir occasionally and add more broth or water if needed.
5. Finish and Serve
