1 Β½ lbs chicken breast, finely chopped (or ground chicken)
2 large eggs
β  cup mayonnaise
Β½ cup shredded mozzarella or cheddar cheese
2 cloves garlic, minced
β  cup all-purpose flour
2 tbsp chopped fresh parsley (or 1 tbsp dried)
1 tsp salt
Β½ tsp black pepper
Β½ tsp paprika
2β3 tbsp vegetable oil, for frying
Instructions:
Chop the chicken:
If using whole breasts, chop the chicken into very small pieces (smaller than bite-size). This helps the fritters hold together and cook evenly.
Make the batter:
