Ingredients
2 cups granulated sugar
1 cup evaporated milk (not sweetened condensed)
2 tablespoons unsalted butter
1 teaspoon vanilla extract
2 cups chopped pecans (or mixed nuts of choice)
1/2 cup shredded coconut (optional)
1/2 cup mini marshmallows (optional, for extra chewiness)
Instructions
Prepare your pan:
Line an 8×8-inch or 9×9-inch square pan with parchment paper or grease it lightly. Set aside.
Cook the sugar mixture:
In a heavy saucepan over medium heat, combine sugar and evaporated milk. Bring to a gentle boil, stirring constantly. Let boil for 4–5 minutes or until it reaches soft ball stage (about 234°F on a candy thermometer).
Remove from heat:
Add butter and vanilla extract. Stir until butter is fully melted and incorporated.
Add the goodies:
Stir in chopped pecans, and if using, add coconut and mini marshmallows. Quickly mix everything together before it begins to set.
Pour & set:
Pour mixture into your prepared pan and smooth the top. Let it cool at room temperature, or speed things up by refrigerating.
Cut & serve:
Once fully set, cut into squares and serve. Store in an airtight container at room temperature for up to a week.
